"Idea for Corn Salsa"
I put together a potential recipe for the corn salsa... By looks alone (and then by reading the ingredients list on this site), you can put together some ideas about how it should go together...
What I've done is taking a package of frozen corn and thawed it out and throw that in a bowl. Dice 1/2 of a red onion and put that in. Dice 1 jalapeno and add it. Squeeze in the juice of a small lime. Chop up some cilantro and throw that on top. Mix it all together and let it sit in the fridge for awhile to let the flavors mingle.
How this is different from the real recipe... I do not have any poblano peppers in my recipe (didn't have any in the kitchen at the time). Also, none of my vegetables are roasted as the ingredients list for the roasted chili-corn salsa suggests.
Oh well, this works for me and I love the taste. Sometimes, I'll add a little sugar if the corn isn't sweet enough. Tinker with it a little to find something you like.
